Fancy Rock Cod in less than 20 minutes

I think it’s been too long since I posted a quick and easy meal. So here we go! Fancy Rock Cod in under twenty minutes.

First I got the fish seasoned and left it to marinate while I prepared everything else. I just topped it with some fresh chopped mint, cilantro, and basil, salt and pepper, and the juice of half a lemon. I drizzled it with avocado oil too.

I sliced the cauliflower into steaks and placed it on a baking sheet with parchment paper. Topped with salt and pepper and a bit of butter on each large piece. I broiled on high for about 15 minutes until golden brown.

While the cauliflower was broiling, I made a really quick salad. Baby Asian greens and arugula with avocado oil, green onion, persian cucumber, shaved carrot, balsamic, lemon juice, basil coriander and mint. Mixed well and placed in the refrigerator to wait for the fish to cook.

As soon as the salad was done I cooked the Rock cod in coconut oil for about 5 minutes on each side. To plate I used the cauliflower as a base, topped with a generous amount of the salad, and then with the fish. I think it looked pretty spectacular for a super simple dish. It was also super yum!
